The hubbs was raised on country cooking and that is mostly what I prepare for him. But I do like to try new food ingredients, cuisines and recipes.  This page is is just a landing place for some of his  favorite recipes. (You will also see I am the queen of casseroles)

Creamy Chicken Ramen Casserole

My GO-TO fiesta rice casserole 

1 lb gr. beef  or chicken or ground turkey or TVP (for a vegetarian option)
1 packet enchilada or taco seasoning
1 pkg mexican rice mix
1 pkg frozen southwest vegetables (black beans, corns, onions)
1 cup taco sauce
1-2 cups of cheese

Brown the meat of your choice, drain fat, add  seasoning mix and water. Add rice packet and frozen vegetables. Cover. Simmer according to directions, stir as needed. When sauce has thickened and the rice is tender, add cheese to melt. Serve plain, with tortilla chips, scoop it in a taco,  ot wrap it in a tortilla.

Kielbasa and Cheese Potatoes skillet

1 pkg of kielbasa sliced  in thin medallions
1 pkg of Simply fresh diced potatoes with onion
1 1/4 c water
1 pkg of country or white gravy mix
1 cup sharp cheddar cheese shreds
1-2 tbs spicy brown mustard

Sautee kielbasa medallions over medium heat until slightly browned.  Add potatoes to the same skillet. Do not add oil as the kielbasa will release oil as it cooks. Cook covered for 8 minutes Stir occasionally. Add 1 /4 c water. Recover. Mix 1 c water with  gravy packet (the gravy packet acts a quick roux which is the basis for any cheese sauce). Add to the skillet, reduce heat to low. Stir occasionally. As the gravy begins to thicken, drizzle in 1-2 tbs of spicy brown mustard. Add shredded cheese and season with pepper.

Breakfast Casserole and Biscuits

1 pkg of frozen potatoes o' brien
1pkg diced ham
1 c water
1 dozen eggs
1 pkg shredded cheese (reserve 1/2 c)
salt, pepper, pinch of nutmeg

Spritz 9x13  pan  with non stick spray  add potatoes and ham  and 1 c water. Cover with foil bake at 350°F for 10 minutes. Mix eggs, spices and cheese. Add to hot potatoes/ ham. Sprinkle remaining cheese on top. Bake uncovered until egg mixture puffs, sets and begins to brown (about15-20 min). Serve with biscuits. 

Greek Green Beans

2 lbs fresh/ frozen or canned green beans
1 c rough chop onion
1-2 cloves garlic minced
1 pint home canned tomatoes or 1 16 oz can diced or 3 large fresh (blanched, cored peeled and diced)
fresh ground pepper to taste
sea salt  to taste
pinch of sugar (if using store bought can tomatoes)
1-2 tbs olive oil
1/2 c water
1 tsp oregano

Heat oil in saute pan . Add onion until soft and beginning to caramelize. Add minced garlic saute for 1-2 minutes. DO NOT BURN onion or garlic. Add green beans. Sprinkle with salt and pepper. Add tomatoes and oregano. If not enough liquid, add water. Cover and simmer until beans are tender. Remove lid, raise heat slightly to  cook off some of the water and thicken the tomato sauce if needed. 

Baking Mix Choco-Chip Banana Bread

2 cups baking mix
1/2 c. brown sugar
1/2 c. granulated sugar
1 tsp. vanilla extract
1/2 tsp. cinnamon
1/2 cup plain yogurt or butter milk
1 c. chocolate chips
2 mashed ripe bananas
2 eggs
1/4 c. shortening

Heat oven to 325°F. Grease and flour loaf pan. Combine baking mix, cinnamon, and chocolate chips in a large bowl. In medium size bowl cream the sugar, shortening and vanilla. Add in yogurt/buttermilk, bananas, and eggs. Mix well. Make a well in flour mixture. Add creamed mixture to dry ingredients. Mix until all ingredients incorporated. Batter will be lumpy. Add to loaf pan. Bake 55-65 minutes or until butter knife in center comes out free of batter. The top of loaf should be golden brown and slightly cracked.

    1. Hi Nancy! Thanks. Let's face it most of us live a "on the run" type lifestyle. Life is stressful enough making dinner shouldn't add to it!
