Happy Cinco de Mayo

HOLY GAUCAMOLE! Tomorrow Today is Cinco de Mayo! I did a Cinco de Mayo  in  February (See Foodie Frugal Friday #2) so I decided to kill 2 posts with stone and posted  today instead of last night. The real reason? I fell asleep before I could finish it. Oops!

I can eat chips and gaucamole everyday and not tire of it. Yum!

Totally tamales! Specialty markets will carry the corn husks. Unless you save your own.  I wonder if you can freeze the husks? hmmm

A great way to sneak in protein, fiber and veggies. It looks more decadent than healthy!

A little sweet to finish the meal?

While not a traditional Sopapilla--it sure does look delicious!

Churros y chocolate. I remember when we made this in 6th grade Spanish class. Our version was as good as this I am sure!
